Simple Chicken Curry




Isn't it funny how things like food or music can take you back to a memory you had years ago? I remember making my first chicken curry with my friend Jocelyn in 2004. It was the first time I cooked anything with a friend and I remember having so much fun making it with her. We’ve lost touch and I’ve tweaked the recipe since then but every time I make curry I think of my old friend Jocelyn. *cheese*. Here’s what you’ll need:

1 kg boneless chicken breasts - diced
4 tbsp medium hot curry
1 tbsp paprika
1tbsp black pepper
1 -2 tbsp cayenne pepper
½ tbsp salt
1 cup white vinegar
1 ½ cup diced sweet potato
1 tin coconut milk
10 tbsp coconut oil
2 medium sized red onions  - diced
4 garlic cloves - crushed
Basmati rice or naan bread, to serve

I prepare my chicken my breasts my washing in a white vinegar – water solution. Simply mix equal parts of vinegar and water and wash the chicken breasts for a few minutes. Rinse thoroughly with water.

Marinate the chicken by mixing in 6 tablespoons of coconut oil and all the spices in a plastic bowl. Cover with cling film and allow the chicken to sit for at least 2 hours in the refrigerator.

Caramelise the onions and garlic in a frying pan/wok with the garlic and  the remaining coconut oil for a few minutes.



Once soft add the chicken to the mixture and allow to cook for 5 minutes.

Add the sweet potato – this helps to thicken the curry and gives it a sweet taste.

Stir in the coconut milk and bring to a boil for a few minutes. 



Then reduce the heat and allow the curry to simmer until the sweet potatoes have softened and the chicken is cooked through.



Serve with basmati rice or naan bread

  3. OMG! I found this recipe on Friday and tried it out. You are my new food inspiration :D. The chicken curry turned out awesome! Wish I'd remembered to take a picture but I forgot and dug in before I remembered. The rest is frozen solid :(.

    I tried to follow your recipe to the T, but I had to modify it slightly after I realized that I didn't have white vinegar and Cayenne pepper, and I couldn't head out to get them. So I washed the chicken with water and some squeezed lemon juice, and I diced rodo to replace the Cayenne, and the food was spectacular. Thank you.
